Not everyone has the chance to make it on the big screen in their lifetime – but one College of Public Health and Human Sciences faculty member will have her chance to shine (on the jumbotron) – at this week’s Beaver football game at Reser Stadium.

Emily Ho, Moore Family Center for Whole Grain Foods, Nutrition and Preventive Health endowed director will be recognized as an outstanding faculty member “who excels in teaching, research and leadership.”

This is the first year Beaver Sports Properties, in partnership with OnPoint Community Credit Union, have honored faculty members across Oregon State – and Emily, who was nominated by the Oregon State Faculty Senate, is the first to be recognized for her achievements.

Look for Emily on the jumbotron during the second timeout in the first quarter of the game Saturday, August 31, when the Beavers line up against Eastern Washington University in Corvallis. The game starts at 3 p.m.

Emily, who was named the Moore Family Center Endowed Director in 2012, started her career at Oregon State in 2003 as an assistant professor in Nutrition and Exercise Sciences.

She’s since become a leading researcher in the field of nutrition – specifically with research relating to zinc and anti-cancer fighting compounds found in broccoli and broccoli sprouts.

She works to make sure everyone knows that eating enough fruits, vegetables and whole grains are important to maintaining a healthy body, that healthy eating can be easy, fun and inexpensive and that eating a healthy diet cannot be replaced by prescriptions or supplements at a pharmacy.

Adding to her many accomplishments in the field and in the college, Emily is spearheading two major college and community-wide events – the “Bob Moore and the Bob’s Red Mill Story – The Importance of Whole Grains” lecture and cooking demonstration Oct. 9, and the first GridIron Chef Contest (submit your recipes by Oct. 4!) and Homecoming Trivia Bowl Oct. 25.
